Ask anyone why they drove out to a Highland cow farm and the honest answer is usually one word: the fluff. It photographs like a teddy bear, but that famous coat is one of the hardest-working pieces of equipment in the pasture — and it's the subject of our Fluff Files quiz.
It's a double coat, and it's doing a job
A Highland wears two layers — a long, weatherproof outer coat over a downy inner one. It's the reason the breed shrugs off weather that sends fancier cattle running for the barn. And it does something surprising for the dinner table, too: because the hair does the insulating, Highlands carry very little external fat — the coat does the job fat does on other breeds, which is why Highland beef trims lean.
The dossan is not a hairstyle
That fringe flopped over their eyes has a name — the dossan — and a purpose: it shields their eyes from driving weather and pestering insects. Pair it with eyelashes that run an inch and a half to three inches long and you have a face built for the field, not just the camera roll.
Not just red
The classic Highland is that glowing ginger red, but the breed's traditional palette runs black, yellow, dun, white, brindle and silver too. Walk our pasture and you'll spot more than one shade of fluffy.
Tender, actually
People assume a rugged, hairy cow means tough beef. A University of Missouri study with the American Highland Cattle Association found Highland beef very tender by shear-force testing — agreeing with research from the University of Glasgow. The fluff and the tenderness are the same story: hair outside, not fat.
